At atmospheric pressure no matter how small the temperature below the phase transition temperature water can exist either as liquid or solid. Right? That's what the phase diagrams show. But why do we breathe out water vapour? Is our body temperture above 100°C? Of course not! And why does water vapour exist in air around us? Also why on chilly morning we can "see" our breathes??

Water can exist only as liquid or solid below 100 C at atmospheric pressure caveat the system is at an equilibrium. Real life situations are not! If you wait long enough, and if it's a closed system, then surely that vapour is gonna condense.
