For physics...

Freshman Year:
Mechanics: Kleppner/Kolenkow
E&M: (1) Purcell, (2) Griffiths

Sophomore Year:
Waves/Optics: idk
Quantum: Griffiths

Junior Year:
Mechanics: (1) Landau/Lifshitz, (2) Finch/Taylor, (3) Goldstein [ Jr. Mechanics could be taken sophomore year also ]
E&M: (1) Griffiths again, (2) Heald/Marion
Thermodynamics: Reif --- but I hate this book

Senior Year (electives):
GR: Hartle
Cosmology: Ryden

Also, you can access the materials from most MIT physics courses through MIT OCW.
They usually state the books that are used.
