choosing score recipients when registering

So the deadline to register for the Nov test is next week, and I still don't really know which grad schools I want to apply to, if any. If I register to take it this week, do I have to know 100% which schools I want to apply to? Is it possible to add more recipients after I register?

You needn't! You can add more recipients as per your wish at the cost of $23 per university! ETS just gives you a provision to do the reporting beforehand, so that you can save $92!
